Sour Cherry & Coconut Granola
This delicious combination of seeds, fruit and oats is the per- fect way to start the day and the slow-release energy will keep you full until lunch. This base recipe can be varied with other seeds and fruits depending on your preference.
  • 280g jumbo oats
  • 50g pecans, thinly sliced
  • Seeds from 1 vanilla pod
  • 80g sliced almonds
  • 50g pumpkin seeds
  • 50g chopped hazelnuts
  • 2 tbsp sunflower oil
  • 4 tbsp honey, warmed
  • 100ml maple syrup
  • 70g toasted coconut flakes
  • 50g dried cherries, roughly chopped
  • 50g sultanas
1. Preheat the oven to 140C.2. Mix all the ingredients except for the coconut and dried fruit in a large bowl.3. Spread half the mixture on to each of two baking trays lined with greaseproof paper and put in the oven to bake for 35 minutes.4. Add half of the fruit and coconut to each tray and return to the oven for 10 minutes.5. Allow to cool completely, then add to an air tight container.
