Simple Tomato Soup
Every cook should have a great tomato soup up their sleeve. But whatever your favourite
recipe, serving it with a slice of cheese on toast makes all the
difference!
Ingredients
- 4 cloves garlic
- Olive oil
- 1/2 small onion, finely chopped
- 1 small carrot, grated
- 12 ripe tomatoes
- 4 tbsp light brown sugar
- 70g tomato purée
- 1 litre tomato juice
- 250ml vegetable stock
- Salt & freshly ground pepper
Instructions
1. Fry the garlic, onion and carrot on a medium heat until soft but not coloured. 2. Pan fry the tomatoes, together with the sugar until broken down and thickened slightly. Add to the onion mixture. 5. Add the tomato puree and cook out for 2 minutes. Then add the tomato juice and stock and simmer for 20 minutes to fully cook the vegetables. 6. Blend, sieve and season well with salt and pepper.
