Chicken Chow Mein
Chicken Chow Mein
Proper fast food. Once your vegetables are prepared this will be on your table in less than 10 minutes.
Ingredients
- FOR THE SAUCE:
- 60ml soy sauce
- 60ml oyster sauce (sweet chilli sauce makes a nice alternative)
- 2 tsp caster sugar
- 1 tbsp dark soy sauce
- 1 tbsp sesame oil
- TO SERVE:
- 6 tbsp vegetable oil
- 4 cloves garlic, finely chopped
- 400g chicken breast, thinly sliced
- 1/2 savoy cabbage, shredded
- 1 small carrot, grated
- 1 red pepper, sliced
- 1 red chilli, seeds removed and finely chopped
- 450g fresh egg noodles
- 3 spring onions, sliced
Instructions
1. Mix the sauce ingredients and keep to one side. 2. Heat the oil in a large wok or fying pan and briefly fry the garlic, being careful not to burn it.3. Seal the chicken in the flavoured oil then add the vegetables (except for the spring onions) and stir fry for 1 minute. 4. Add the noodles and sauce. Continue to stir fry until everything is combined and the chicken is cooked through. 5. Sprinkle over the spring onions, season and serve.
