Pancakes
Pancakes with tropical fruit
Pancake day is traditionally when people used up their luxuries, such as eggs and sugar, before they started their lent fast. Of course, they’re also an excuse to add some sweet treats such as banana and pecan!
Ingredients
- 120g plain flour
- 2 large eggs
- 75ml soda water
- 200ml full fat milk
- 25g butter, melted
- pinch sea salt
- TO SERVE:
- a handful of toasted pecans
- 2 bananas, sliced
- drizzle warmed honey
Instructions
1. To make the batter, sieve the flour and whisk in the eggs until smooth. Slowly add the soda water and milk, whisking until the consistency of single cream with no lumps.2. Leave the batter to rest for 30 minutes while you prepare the fruit.3. Chop the mango and kiwi fruit into small dice and quarter the strawberries. Keep to one side.4. To cook the pancakes, heat a small frying pan over a high heat until smoking hot. Lower the heat a little and brush with melted butter.5. Add 3 tbsp of batter to the pan and swirl until the base of the pan is covered. Cook for 30-45 seconds, flip and repeat on the other side. Make the remaining pancakes, brushing the pan with more melted butter as required.6. Fold each pancake into quarters, serving 2 per person. Crumble over the nuts and banana, and drizzle with honey.
