Homemade Lemonade WIth Ginger & Mint
There's nothing more refreshing than homemade lemonade
and it's incredibly easy to make. Infusing ginger and mint
maximises the flavour, but you can leave these out if you prefer something more traditional.
If you like carbonated lemonade, halve the water in the syrup
and add 300ml of sparkling water before serving.
Ingredients
- 4 unwaxed lemons
- 100g caster sugar
- 600ml water
- 5 ice cubes
- 10g piece of ginger, sliced
- 1 small bunch fresh mint leaves
Instructions
1. Finely grate the zest from two of the lemons making
sure to avoid the bitter white pith. 2. Add the sugar and water to a pan and bring to the boil
to melt the sugar. 3. Pour the syrup over the lemon zest, then add the sliced
ginger and mint leaves. Leave to steep for 30 minutes
for the flavours to infuse. 4. Using a sharp knife, cut the top and bottom off the
lemons, then slice away the remaining skin and pith.
Add the whole lemons to the rest of the ingredients. 5.Blend everything in a blender, press through a sieve
and refrigerate to chill. Blend the lemonade with the ice cubes and
serve with a sprig of mint.
