Candied Pecans
These glass-like nuts are beautiful as well as delicious. Just be careful not to overcook or they can quickly turn bitter.
Ingredients
- 200g pecan halves
- 150g caster sugar
- 150ml water
- fine sea salt
Instructions
1. Heat a deep fat fryer (or a deep sauce pan 1/2 filled with sunflower oil) to 180C.2. Add the sugar and water to a large frying pan and bring to the boil. 3. Add the pecans and cook to 110C. 4. Carefully transfer the nuts to the oil and fry for 1 minute. 6. Carefully remove to parchment paper using a slotted spoon, ensuring that all the nuts are separated. Sprinkle with a little sea salt and leave to cool.
