  • 3 tbsp vegetable oil
  • 1/2 red onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1 green chilli, seeded and finely chopped
  • 1 medium tomato, chopped
  • 2 tbsp fresh coriander, chopped (plus more to garnish)
  • 4 large eggs
  • 2 tbsp milk
  • 2 tbsp melted ghee (clarified butter)
  • 1/2 tsp sea salt
1. Fry the onion and garlic in vegetable oil for 3 minutes over a medium heat.2. Add the cumin seeds and cook for a further minute.3. Stir in the ground spices and fry for 30 seconds, stirring continuously.4. Add the chopped tomato, green chilli and coriander. 5. Meanwhile, lightly whisk the eggs, milk, butter and salt in a glass bowl with a fork.6. Add the spiced vegetables and put the bowl over a pan of barely simmering water (making sure that the bottom doesn't come into direct contact with the water).7. Cook the eggs over the lightly simmering water, stirring continuously, until creamy and cooked (about 15 minutes).8. Serve with sour dough toast and garnish with fresh coriander.
