Sweet chilli chicken with cashews
This is my "go-to" when I'm craving a takeaway. Depending on your tastes you can make it sweeter or more spicy, but this is a great basic recipe.
  • 50g runny honey
  • 4tbsp soy sauce
  • juice of 1 lime
  • 3tbsp sweet chilli sauce
  • 1tbsp tomato puree
  • 1tbsp white wine vinegar
  • 2tbsp hot sauce
  • 700g chicken thighs, chopped into bite sized pieces
  • 4 heaped tbsp plain flour
  • 1 red onion, thinly sliced
  • 1tsp chopped root ginger, finely chopped
  • 2 garlic cloves, crushed
  • 1 green pepper, sliced
  • 15g coriander, chopped
  • 50g roasted cashew nuts
  • 200g broccoli florets, cooked
  • vegetable oil
1. Gently stir the sauce ingredients in a warm pan until well mixed and the honey has melted.2. In a separate pan, fry the onions until soft then add the ginger, garlic and peppers. Continue to fry over a medium heat for another 5 minutes.3. Whilst the vegetables are cooking, dredge the chicken pieces in seasoned flour. Add to the vegetables and cook for 2-3 minutes until sealed. 4. Pour the sauce into the pan and simmer until the chicken is cooked through, about 8mins.5. Stir through the chopped coriander, cashews and broccoli. Serve with white rice
