Ultimate Buffalo WIngs with Bleu Cheese
These wings are addictive. I like to prepare mine as “lollipops” so they are easier to eat but if you like a simpler life - or just enjoy the mess - you can simply cut each wing into two pieces.
Ingredients
  • 16 free range chicken wings
  • FOR THE BLEU CHEESE DIP:
  • 225g dolce latte or other bleu cheese
  • 210ml sour cream
  • 3 tbsp mayonnaise
  • lemon juice to taste
  • FOR THE HOT SAUCE:
  • 225ml Franks© hot sauce
  • 120g unsalted butter
  • 3 tbsp honey
Instructions
1. Preheat the oven to 200C.2. Prepare the chicken by removing the wing tips and separating into two by cutting through the “elbow” joint. 3. Coat the chicken pieces in oil and season well. Roast in the preheated oven for 30-40 minutes, depending on the size of the wing pieces, turning halfway through. 4. Meanwhile, make the bleu cheese dip. Mix all the ingredients and mash with a fork to the desired consistency. 5. Slowly heat and stir the hot sauce ingredients until melted—do not allow this to boil, or the butter will separate. 6. Dip the cooked chicken pieces in the sauce and serve with the bleu cheese, lettuce and celery batons. Drizzle any remaining sauce over the chicken or serve on the side.
