Homemade apple 'slaw
Looking for an easy way to impress at your next barbecue? The perfect accompaniment for pulled pork? Try this delicious homemade coleslaw pimped up with fresh apple.
Ingredients
  • 1/8 medium white cabbage
  • 1/8 medium red cabbage
  • 1/2 medium carrot
  • 1/2 red onion
  • 0.5 tsp table salt
  • 0.5 tsp caster sugar
  • 0.5 tbsp white wine vinegar
  • 2.5 tbsp mayonnaise
  • 0.5 tbsp wholegrain mustard
  • 1 tsp lemon juice
  • 1/2 granny smith apple, cored
Instructions
1. Cut out the core from the cabbages and finely shred.2. Peel the carrots and shave with a speed peeler, then cut into long thin "matchsticks".3. Slice the red onion as thinly as possible.4. Toss the vegetables with the vinegar, sugar & salt and leave for one hour in a colander over a sink. They will release plenty of liquid.5. Mix the mayonnaise, mustard and lemon juice and refrigerate.6. Push out as much liquid as possible from the vegetables and dry with a paper towel. Toss in the mayonnaise mixture. Season if necessary.7. Cut the apple into very thin matchsticks and stir through. Refrigerate for 30 minutes then serve.
