Victoria sponge

4 medium eggs

Same weight in self raising flour, unsalted butter (softened), 1 tsp vanilla extract, caster sugar, 1 tbsp milk, 1 tsp baking powder

Preheat oven to 170C - try 160C for 25mins

mix butter, vanilla and sugar in mixer 

Fold through flour

Add 1 tbsp milk

butter and line 2 x 20cm tins

Split batter, make slight dimple in sponge

Cook for 20-22mins

Leave 5 mins in tin then cool on rack

Spread with 6 tbsp strawberry jam

Whip 180ml double cream with 2tsp caster sugar spread on other half

build, lightly dust with icing sugar and then decorate with strawberry halves on top



PIPE dots around edge with raspberries in between then fill gap - use raspberry jam - add small pile of strawberries and cream t top
